Got a dinner party to attend or throwing a party yourself? Looking for a showstopper, tasty, dessert to impress everyone, but haven't got the time or expert culinary skills? Then this dessert is for you, just don't tell anyone it's low effort and quick to knock up. Here's my recipe for my very berry nut pavlova.
Ingredients
4 egg whites
250g sugar
1tsp of vanilla essence
1tsp of cornflower
1tsp of lemon juice
Double cream or extra thick double cream
Strawberries
Raspberries
Blueberries
1/2 packs of Real Handful Strawberry Stomp (Can be purchased from Sainsbury’s, click this link!)
Method
1.Preheat the oven to 130 degrees fan .
2. Rip off a piece of greaseproof paper and use a diner plate to draw around the outside.
3. Whisk the egg whites until stiff, use the tip the bowl over your head method to test 😂. If you have done it right it shouldn’t splat on your head.
4. Turn down the whisk speed and add the sugar a spoonful at a time, it should be looking nice and glossy.
5. Still whisking add the vanilla, cornflower and lemon juice.
6. Dollop the fluffy mixture on to the greaseproof paper spreading it around to making a circle (that's where the lines of a diner plate help to get it looking equal).
7.Bake for 1hr then turn the oven off and leave the meringue in the oven until it has cooled down.
8. Whip your double cream or if you purchased extra thick cream no whipping is required, spoon the cream onto the center of the meringue.
9. Chop your strawberries, then place on top of the cream along with the raspberries and blueberries.
10. Sprinkle the Real Handful Strawberry Stomp fruit, nut and seed mixture on top. Then taa daa, Bon appetit!
The meringue takes 5/10 minutes to whisk up and I even did it the night before and put it in an airtight container. As long you plan ahead and schedule in your cooking time it's so simple to create. Adding the cream, berries and nuts on top is also a 5 minute job. It's my go to dessert as a busy mum and is enjoyed by both adults and kids. It's a winner all round in my eyes!
