30 minute cooking: Quick and easy pesto wheels


Now that picnic weather is approaching us, these pesto wheels are the perfect snack, or meal time item! They can be eaten hot or cold and can be adapted to suit children or adults. You can mix and match ingredients and put any fillings you like inside!

Ingredients

  • Ready to roll puff pastry

  • Pesto - I used both tomato and basil

  • Tomatoes

  • Pine nuts

  • Goats cheese

  • Mozzarella

  • Fresh basil

I was going to use spring onions but decided against it, I also wish I threw some sun-dried tomatoes in too. Always next time I suppose!


Method


1.Preheat oven to 180oc


2.Unwrap the pastry. Cut it in half and spread the pesto on top. I did half and half.


3. Split each half of pastry into quarters. So I had 4 basil pesto strips and the 4 tomatoes strips. TIP a pizza cutter is handy here for cutting!


4. For the kids I decided to leave theirs plain with only scattered mozzarella on top. They had 2 basil presto and 2 tomato pesto.


5. For the adult ones I scattered goats cheese, pine nuts and basil onto the green pesto sections. On the tomato ones I put mozzarella, quartered tomatoes and basil onto the tomato sections.


7. Roll them all up into wheels and place on the tray. I even reused the grease proof paper the pastry was wrapped in on the baking sheet.


8. Bake in the oven for 30 mins roughly or until golden and flaky. I under estimated how long they would take to cook so took them out maybe a few minutes earlier than I would have liked.


Then enjoy! I served ours with a couscous salad! The children ate all of theirs after fussy and saying err what's that! Baby Isabel ate hers immediately and so did I! Super tasty either hot or cold! I had the left overs for lunch the next day! Other fillings could include bacon, sweetcorn, sun-dried tomato's. What would you put in yours?
