Homemade vegan summer berry chia ice pops!

So excited to have teamed up with my insta pal from across the pond, to join her with her New recipe Tuesday! I absolutely love this concept and she has many fantastic simple recipes perfect for families. Give her a follow on Instagram @thrillofhome to see what she does!




So I decided to tag along and try her summer berry chia ice pops! Note: my kids and myself absolutely love theses, I was secretly worried they wouldn't like it, but I'm amazed.


Perfect for summer it ticks all the boxes, 1 of your 5 a day if not more! ✅ healthy and refreshing ✅ kid friendly ✅ and easy as 1,2,3 ✅. You just stick all the ingredients into a blender and then freeze so I thought how difficult can it be! So let's get going:




Ingredients




2 cups of Summer berries - (I brought a frozen bag of mixed berries; strawberries, raspberries and blueberries thawed for 5 mins)


1/4 cup of coconut cream


1/4 cup of almond milk (my America friend uses 1/2 cup of Califia Farms Better Half Unsweetened Half Almond Half Coconut Milk. Essentially is half coconut cream half almond milk, but this can only be purchased in the States!)


1 Tablespoon Chia Seeds


1 Tablespoon Honey


The process


Essentially you can throw all of the above into a blender and pour it into molds. However my blender isn't big enough and I'm a bit picky so sieved it before we put it into molds.




So simple and a fab way to sneak extra fruit into your kids diet! I can’t express how thrilled I am to now have this secret recipe in my pocket. The kids think its just a normal ice pop but mum knows it’s full of goodness!
